Dark Roast vs. Medium Roast: What's the Difference?

When you're shopping for coffee, roast level is one of the first choices you'll face. Dark roast or medium roast? Bold or balanced? The answer depends on what you're looking for — and there are a few common misconceptions worth clearing up before you decide.

What Happens During Roasting?

Coffee beans start out green and relatively flavorless. Roasting transforms them — developing the sugars, oils, and aromatic compounds that give coffee its character. The longer and hotter the roast, the more the bean's original flavors give way to roast-derived flavors.

Medium Roast: Bright and Balanced

Medium roasts are roasted to an internal temperature of around 410–430°F. They retain more of the bean's origin characteristics — the terroir, altitude, and processing method all come through clearly. You'll often notice:

  • Brighter acidity
  • Fruity or floral notes
  • A lighter body
  • More caffeine (contrary to popular belief, lighter roasts retain slightly more caffeine)

Medium roasts are a great choice if you want to taste the nuances of where a coffee comes from.

Dark Roast: Smooth, Rich, and Low in Bitterness — When Done Right

Here's where a lot of people get it wrong: dark roast doesn't have to mean bitter. Over-roasting is what causes bitterness — not the roast level itself. A well-crafted dark roast brings out deep, complex flavors while keeping the cup smooth and approachable.

A quality dark roast like our Plantation Blue Jamaica Blue Mountain Coffee offers:

  • A full, rich body
  • Low acidity — easier on the stomach
  • Smooth finish with no harsh bite
  • Notes of dark chocolate, brown sugar, and subtle earthiness
  • Consistent flavor across brewing methods

Jamaica Blue Mountain coffee is particularly well-suited to a dark roast profile. The bean's naturally mild, balanced character means it develops beautifully under heat without turning sharp or astringent.

The Bitterness Myth

Many coffee drinkers avoid dark roast because they've had bitter, over-roasted coffee in the past — often from large commercial brands that use lower-quality beans and push the roast too far to mask defects. With high-quality beans like JBM, a dark roast is an entirely different experience: smooth, full-bodied, and deeply satisfying.

Which Roast Is Right for You?

Choose medium roast if you enjoy bright, complex flavors and want to taste the origin character of the bean.

Choose dark roast if you prefer a smooth, rich, low-acid cup with a full body and consistent flavor — especially if you brew espresso, French press, or cold brew.
